Recipe of the week: Thai noodles
This bowl of spicy, soupy, noodly goodness comes together completely in the microwave! It's an amazingly simple supper for when you can't be bothered getting out the pots and pans or turning the oven on.
Ingredients (serves three)
1 large chilli, chopped
1 tsp garlic paste
2 tbsp Thai green curry paste
200g frozen peas
1 can coconut milk (cream and water)
1 stock cube (chicken or vegetable)
2 or 3 nests of rice noodles
juice 1 lime
Handful of fresh coriander, stalks finely chopped and leaves to garnish
Method
Add the chilli, garlic, coriander stalks and curry paste to a large glass bowl.
Add in the coconut milk and stir well. Dissolve the stock cube in 400ml liquid and add to the bowl.
Add in the rice noodles and frozen peas and push into the liquid.
Cook for around six or seven minutes in the microwave, stirring every minute or so.
Serve the noodles in deep bowls with the fresh coriander and extra lime wedges.
