Recipe of the week: Smoked salmon starter

Perfect as a light starter before a rich Christmas dinner, this dish is simple and quick to prepare. Smoked salmon is available in small packets so you don't have to buy more then you need.

Ingredients (serves four)

4 slices of sourdough bread (frozen bread works well. Defrost at room temperature or toast straight from frozen.)

Cream cheese

4 slices of smoked salmon

Lemon

Black pepper

Salad leaves to serve (or use up what you have in the fridge. Broccoli, asparagus, peas and all bean varieties can be used instead.

Method

Toast a slice of sourdough bread for each person.

Top with a generous serving of cream cheese and a slice of smoked salmon.

Season with a squeeze of lemon and black pepper.

Serve with salad leaves.
