Young Brora baker wins national competition after judges wowed by her plum frangipane tart recipe

A YOUNG Brora girl is celebrating after having won a national baking competition.

Twelve-year-old Libby Roseveare, an S1 student at Golspie High School, has been named the overall winner in the 2022 FutureChef BakeOff contest.

The baking competition is open to all secondary year one and two students and one overall winner is chosen along with five runners-up

Contestants were asked to produce an 8 or 10 inch plain or fluted fruit tart using a homemade shortcrust pastry and fresh or tinned fruit.

Because of Covid restrictions, judges were unable to taste the tarts and based their decision on photographs and paperwork submitted by competitors.

The young bakers had to provide a recipe and timed schedule, details of their cooking method, and a description of their tart as well as a detailed explanation of why each ingredient had been chosen.

And Libby’s delicious plum frangipane tart wowed the judges.

Mum Anna Renouf told the Northern Times: “Libby loves baking and has been baking since she was little.

“She bakes a lot with her grandmother, Jill, and also at home and makes cakes to take into school for friends’ birthdays.

“She chose to do a plum frangipane tart as she thought that it looked really pretty and she liked the pairing of plum and almond flavours combined with her lemon flavoured, sweet shortcrust pastry.

“She took photos at each stage of the baking process and submitted them along with a detailed description of ingredient used, why she had chosen them and the steps she took.”

Libby and her mum are now preparing to travel down to London for the awards presentation which will take place on Monday, March 14.

The youngster will receive a winner’s certificate along with a personalised chef’s apron with her name on it, and skull cap and BakeOff inspired knife set.
